Pepper & Chicken Stir-fry

1lb chicken (or beef) - cut into bite sized pieces

1tsp whole wheat flour or corn starch

1tsp salt

1tsp Bragg's Liquid Aminos

¼tsp pepper

Combine all of the above ingredients and refrigerate for about 30 minutes.


Set aside...

24 tomato wedges

2-3 peppers - cut to squares

1 onion - cut into 8 sections and then separate


Set aside...

1c chicken broth

Splash of real maple syrup

2TBS Bragg's Liquid Aminos

2TBS *whole wheat flour* or corn starch


Add to heated large pan until fragrant, but not browned...


4 or more garlic cloves

1tsp ginger root or liquid ginger

Then add...

onion and chicken with marinade, cook until chicken is thoroughly cooked and then set aside.  Add more oil, saute peppers, but keep crisp, then add tomatoes until they break down a bit (about 2-3 minutes).  Add chicken with onions and chicken broth mixture, but be sure to whisk well in a bowl before adding if using the flour - otherwise you get lumps.


Serve over brown rice or capellini pasta and top with scallions if you'd like - yummy!!!
